Hooray for Cheese Toast!
I've been meaning to write a quick post praising my very favorite lunch item....Cheese Toast! I used to make this when I was living downtown, pre-children, for breakfast! I like to make it now for several reasons: 1. It's super easy (pre-heat oven to 350, put slices of bread on a cookie sheet, put cheese on top of bread, spray all over with PAM, put in oven for 20 minutes...10 if you have convection!)
2. Everyone loves it!
3. It's like grilled cheese sandwiches, but I don't burn them! (Logan said I need to take "one more class in grilled cheese making" since I always burn mine.) The real problem is that I'm always dealing with the kids while trying to cook . Running away from the stove to break up fights, kiss boo-boos or answer some other demand makes me lose focus on accurate flipping!!!

The finished product! I cut off the crusts and then cut them into strips for Bray and triangles (sometimes with ketchup happy faces on them) for Logan and Aiden. We usually have something else too like soup or fruit. Yum...I'm getting hungry writing this post!
Hooray for cheese toast!!

Yum!! It's too funny - that happens to be on the menu for breakfast tomorrow - and this was BEFORE I read the blog. Nothing better! And now - I'm starved!
